Peppers and Eggs Recipe on FOX 46 Charlotte

Peppers and Eggs

5 large eggs

4 large green peppers

1 medium sweet onion, chopped

5 tablespoons olive oil

1 clove garlic, minced

salt & pepper to taste

1 loaf of fresh Crusty Italian bread – Yum!

Clean, seed, and slice peppers lengthwise into 1-inch strips.  Beat eggs thoroughly.  Heat oil in large frying pan until hot, adding garlic, onion, and sliced peppers.  Fry veggies until slightly brown.  Lower the heat, cover pan, and sauté slowly for approximately 15 minutes, or until peppers are soft and slightly brown.  Fold in beaten eggs, salt and pepper.  Continue to stir until eggs are cooked.

Serving Options:  Provolone Cheese, Prosciutto, Tomato Slices, Sweet Pickled Peppers

This is a great sandwich!  But, you must have the fresh Italian bread to truly appreciate the great flavors.  Many times, this was breakfast, lunch or dinner in our house.  We sometimes add meat, cheese and tomatoes to the sandwich.
