Like Greek?

Celebrate the Summer Solstice tonight… Add some music, wine, fresh bread, and great company.  Create a light, relaxed atmosphere, and wish upon a star!

Create your own Greek Salad Bar, while choosing from all options listed below, or select your favorite combination of ingredients.

Greek Salad

Salad Ingredient Suggestions:

Greens:  Radicchio, Romaine, Red Romaine

Vegetables:  Artichokes, cucumbers, Fennel, Peppers, Red Onion

Fruits:  Lemons, Olives, Pomegranate Seeds, Tomatoes

Beans & Legumes:  Chick Peas

Cheese & Tofu:  Greek Feta

Poultry:  Grilled Chicken

Shellfish:  Grilled Shrimp

Fish:  Grilled Calamari

Dressings:  Greek Lemon, Oregano

* A NOTE on Dressings:  They may be purchased and ready-made, or create your own.  I chose to create the Greek Salad Dressing below:

Greek Salad Dressing

1/2 cup extra-virgin olive oil

1/4 cup freshly squeezed lemon juice

1 garlic clove, minced

1/2 teaspoon sea salt

1/2 teaspoon dried oregano, OR 1 teaspoon of freshly chopped oregano

grinding of black pepper, to taste

Combine dressing ingredients, add to your salad and toss.

About Cynthia Ferich

After writing and self-publishing “MaMa Mia Cucina” in 2007, Cynthia's writing, cooking and culinary teachings evolved into being as an entity surrounding food, fun, family and friends.

In an effort to capture her family’s ‘old world’ Italian recipes for future generations to enjoy, her grandmother, ‘Noni’, and Cynthia joined forces. "She measured, I wrote, and we cooked."

During her grandmother's latter 80 years, she traveled in memory through her life, as they shared in stories of a lifetime and long ago. As they shared this final chapter in her life, what Cynthia soon discovered through all of the measuring, cooking, sharing in the love of a family, and in the love of a friendship, was the passion for cooking, and a love that nourishes us all… It’s all about the FOOD!
