My Favorite Apple Cobbler Cooking Segment on WBTV Charlotte, NC

Apple Cobbler

8 tart apples (such as Granny Smith)
1 cup sugar
¼ cup brown sugar
1 teaspoon cinnamon (plus additional for sprinkling)
½ cup water
1 teaspoon vanilla extract
½ cup butter (1 stick), cubed
*¾ cup flour
Pinch of salt

Preheat oven to 375 degrees. Wash, core, peel and slice apples. Arrange apples in an 8 x 8-inch ovenproof pan. Combine sugar, brown sugar, cinnamon and water in a saucepan and heat & stir until sugar is dissolved. Remove from heat, stir in vanilla and pour over apples.

In a bowl, combine flour, salt and cubed butter. Cut with a pastry cutter or fork until the size of small peas. Crumble flour mixture evenly over the apple mixture.

Bake in preheated oven at 375 degrees for approximately 40 minutes or until golden brown and apples are tender. Serve warm or cold.

Serving Suggestions: Whipped Cream; Ice Cream

*Note: For a gluten-free alternative, substitute (and combine) ½ cup sweet brown rice flour and ¼ cup coconut flour for all-purpose flour
