Zucchini Bread

Preheat oven to 300 degrees. Wash zucchini from all sand and dirt, cut and remove stems, slice zucchini lengthwise, and remove all seeds. Grate zucchini and set aside. Mix all remaining ingredients together. Add zucchini. Grease and flour two loaf pans, and divide the batter evenly, pouring into prepared pans. Bake at 300 degrees for 1-1/2 hours. Remove from oven, cool and let rest for 15 minutes, and then removing from pans. Cool completely on wire cooling racks.

Serving Suggestions: Slice bread, and fan. On a serving plate, dust with sifted powdered sugar.

The breads made a very nice gift. Purchase a pretty serving piece, wrap each with cellophane paper, and tie with a pretty satin ribbon, using festive-colored ribbons of the season, or tie with raffia for a more rustic look. A nice hostess gift for a dinner party, or ladies luncheon.

Ingredients

  • 3 cups grated zucchini
  • 3 cups sugar
  • 1 cup chopped walnuts
  • 1 cup chopped dates
  • 1-1/2 cups canola oil
  • 4 eggs 3 cups all-purpose flour
  • 3 cups flour (GF Flour may be substituted)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1-1/2 teaspoon cinnamon

Recipe Notes

*Note: To cut down on the oil, substitute half of the oil with applesauce to equal: ¾ cup canola and ¾ cup applesauce.

 

*Another Note: May also be prepared as muffins in muffin cups, shortening the baking time.
