Tomato, Cucumber & Pepper Salad

Ingredients

  • 2 Whole Cucumbers, seeded and sliced
  • 2 Whole Green, Red, Orange or Yellow Peppers, seeded and cut into bite-sized pieces
  • 1 bunch Green Onions, sliced
  • 4-5 Roma Tomatoes, cut or sliced into bite-sized pieces
  • 2 Cups Small Mozzarella Balls
  • 1 Cup Kalamata Olives, sliced
  • 1 Tablespoon Dried Oregano OR 2 Tablespoons Fresh Oregano

Salad Dressing

  • 1/2 Cup Extra Virgin Olive Oil
  • 1/4 Cup Balsamic Vinegar
  • 1/2 Cup Honey
  • 3 Garlic Cloves, minced
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions

  1. In a large bowl, add salad ingredients and toss with dressing. Serve chilled or at room temperature.
